With Labor Day approaching I wanted to let the customers know that we have 1 1/4" thick Steaks in several cuts — Ribeyes (1 box), T-Bones (1 box), Porterhouse (approx 1 box) and NY Strip Steaks (1 box). They are being sold at the same price per lb as listed for our regular 7/8" thick steaks. And of course we have a LOT of all the other steaks at 7/8" thick plus ground beef!

Hard boiling:
Any egg can be hard boiled, but the freshest eggs will probably not peel very well. The reason is that the egg membrane has not yet been infused with air. If you have fresh eggs and want to hard boil them, let them age a week or so first. This “problem” is not too common for store bought eggs.

Young hens are just starting to lay. Many folks say that these are the tastiest eggs, and they may well be, as this is the prime of the hen's life: a time when she is healthiest, in her "puberty". The yolk may be a little richer, but I do not know scientific facts on this. Yes, it takes 6 months for a chicken to start laying, and another two months, on the average, to make full-sized eggs. So, now we may begin to see why the cost of eggs continues to rise: We feed the hen for eight months in faith that, in her life-time, she will repay us with her eggs. Each chicken may produce one-half dozen eggs/week, in good conditions and in good health.

The hens lay the eggs in nest boxes in the barn during the day, and then go back out to pick, peck, cluck, and socialize. At night, the whole flock roosts in a huge airy barn, protected from night-time dangers. We try to keep their lives as natural as possible, and have actual tree limbs for some of the roosts. A deep layer of leaves line the roosting area, and the hen's nest boxes.
