Young hens are just starting to lay. Many folks say that these are the tastiest eggs, and they may well be, as this is the prime of the hen's life: a time when she is healthiest, in her "puberty". The yolk may be a little richer, but I do not know scientific facts on this. Yes, it takes 6 months for a chicken to start laying, and another two months, on the average, to make full-sized eggs. So, now we may begin to see why the cost of eggs continues to rise: We feed the hen for eight months in faith that, in her life-time, she will repay us with her eggs. Each chicken may produce one-half dozen eggs/week, in good conditions and in good health.

The hens lay the eggs in nest boxes in the barn during the day, and then go back out to pick, peck, cluck, and socialize. At night, the whole flock roosts in a huge airy barn, protected from night-time dangers. We try to keep their lives as natural as possible, and have actual tree limbs for some of the roosts. A deep layer of leaves line the roosting area, and the hen's nest boxes.

Donna tries to make each carton of eggs a piece of art. :0) These eggs are considered Grade B, still great for cooking. They are fresh as the Grade A eggs. Wonderful for fried or boiled eggs. Some may be odd shaped, different sizes, have rough spots on shells, or have a stain which can't be washed off of the shell. If the size isn't important, why not order some for your breakfast?
