Theflavor of garlic chives is more like garlic than chives[1], though much milder. Both leaves and the stalks of the flowers are used as a flavoring similarly to chives, green onions or garlic and are used as a stir fry ingredient.A relatively new vegetable in the English-speaking world but well-known in Asian cuisine, In China, they are often used to make dumplings with a combination of egg, shrimp and pork. They are a common ingredient in Chinese jiaozi dumplings and the Japanese and Korean equivalents. The flowers may also be used as a spice. In Vietnam, the leaves of garlic chives are cut up into short pieces and used as the only vegetable in a soup of broth and sliced pork kidneys.

In the past, the flowers were spread on doorways and woven into garlands or chaplets for celebrating May Day.[6]
Food
The young leaves when boiled is a wholesome vegetable[6] and was (1841) eaten in several parts of Europe;[13]however, cattle do not seem to enjoy it and graze around them.[6]
Medicinal
Mucilage is present in many of the Malvaceae family,[14] especially the fruit[15] and were employed medicinally, as demulcents and emollients.[16] The seeds were used internally in a decoction as a demulcent and diuretic[15][13] and the leaves made into poultices as an emollient for external applications.[15]
Other
The species has long been used as a natural yellow dye,[17] perhaps more recently, cream color, yellow and green dyes can be obtained from the plant and the seeds.[18] A tincture of the flowers can make a very sensitive test for alkalis.[6]

I love to grow it because it effects my whole being like no other plant! The fragrance just makes me happy! Teas from it stimulate my mind, making me feel more positive and hopeful. It soothes my nerves, while stimulating my imagination. No, I'm not talking about some drug; but I am talking about the wonders of a common cooking herb, Rosemary! Rosemary not only seasons meats, poultry, and soups, but is wonderful as a tea. For a refreshing bath, wrap some in a square of cloth tied with a ribbon. Soak for a while, and you will be refreshed and perky!
A sachet of Rosemary makes an excellent thank-you gift! Tuck one in a drawer to scent your clotheing, and also repel any would-be insect invaders!
