"Bee Balm is a plant that was used often, both medicinally and as a beverage by American Indians and by the European settlers in America. Oswego Tea, made from the leaves of the plant, was a staple in households during colonial times after the settlers lost access to English teas after the Boston Tea Party. Today, Bee Balm is still used widely for a variety of medicinal purposes, and limited testing has shown that it does have some benefits as a remedy for quite a few common medical complaints.

As a member of the Mint family, it is no surprise that Bee Balm taken in a tea (Oswego Tea) is a tasty, well-known remedy for digestive problems, a trait seen in almost all Mint family members. It appears to have beneficial properties that include improving general digestion, easing flatulence, improving appetite, relieving colic, reducing bloating, alleviating menstrual cramping, and reducing nausea and vomiting. Oswego Tea can also be made as a soothing drink to calm nerves and as a relaxing sleep aid, and is often combined with other well-known relaxation herbs such as Valerian and Chamomile for this purpose.
Externally, bee balm is a wonderful aromatherapy herb. Try placing a handful of fresh leaves in a cloth and positioning it under hot running bath water for a relaxing, lemony scented bath. Deeply breathing in the steam may also help relieve cold symptoms such as sore throat, fever, and congestion.
Bee Balm has also shown some merit as an antiseptic and antibacterial, and a clean cloth can be soaked in a tea and used as a compress, or an ointment can be made to help relieve pain and speed healing for minor wounds, insect stings, and for relief of eczema, psoriasis, cold sores, and clearing up acne.
CONTRAINDICATIONS: There is some literature that suggests that Bee Balm should not be ingested if there is a history of thyroid problems, and of course, anyone who is pregnant should also steer clear. Although Bee Balm leaves can be rubbed directly on the skin as a mosquito repellant, on some people it may cause phototoxicity (sensitivity to the sun), so using undiluted is not recommended without first testing on a small area of skin."

"Pine needle tea has been around for a very long time. It was first used by Native American’s for its healing properties. In fact they introduced pine needle tea to the early settlers (in Canada and New England) as a cure for scurvy, which is caused by lack of vitamin C.

Pine needle tea is great for colds, chest congestion and upper respiratory illnesses, though it is also rumored to help with many other ailments as well. You can do your own search on the web to find out more. It is packed with antioxidants, vitamin C and vitamin A.
I want to give thanks to Grandmother Bobbie for introducing me to pine needle tea and its healing effects. I experienced its healing first hand. This tea made my chest congestion disappear in less than a day. I thought for sure I was going to get bronchitis or pneumonia! But instead, I drank pine needle tea and it helped heal my chest and sinuses. I could literally feel my chest “loosen up” and my breathing became much easier.

½ cup of pine needles, green young needles are best
1.5 pints of water
Bring water to boil in a stainless steel pan (do not use aluminum)
Add the pine needles, reduce heat to a simmer for 20 minutes to overnight.
Strain needles and drink warm or cold
you can also put them in unbleached tea bags
The tea should be red in color with a little oil floating on top.
You can add honey or cinnamon if you like, (since I have type 2 diabetes I add cinnamon). It really doesn’t taste like pine; it has a very mild flavor.
White pine needles have 5 needles on each sprig…
but you can use any pine or fir tree (though the recipe may differ).
Do not drink pine needle tea when pregnant
or if you are allergic to pine.

Nutritional InfoHigh in Vitamin C, used by native Americans, this tea has a flavor reminescent of a pine forest. Brew and sip, sweetened or not, for a great winter treat.1First, fill the pot about half full. Then, place pot 3/4 full of water onto heat source.
Step 2Bring to boil and let boil for about 5 to 10 minutes. Carefully remove lid and extract needles from pot. The water color should be a light brown to yellowish. Now let the tea steep for 45 minutes to an hour. Once it has had ample steeping time, strain the tea through a coffee filter to remove smaller particles.
Step 3 After filtering into a pitcher, add about 2 cups sugar.(2 cups per gallon of tea) Stir well. Now you can have your pine needle tea.

They are not known to be harmful or dangerous to children or pets, or any of the house's fixtures

The leaves of spearmint are edible raw or cooked. Having a strong spearmint flavor, they are used as a flavoring in salads or cooked foods. Spearmint leaves can be used whole, chopped, dried and ground, frozen, preserved in salt, sugar, sugar syrup, alcohol, oil, or dried. The leaves are often used in 'mint sauce', which is used as a flavoring in meals. An essential oil from the leaves and flowers is used as a flavoring in sweets, ice cream, drinks etc. It has a spearmint flavor.
Medicinal Uses:
Spearmint is a commonly used domestic herbal remedy. A tea made from the leaves has traditionally been used in the treatment of fevers, headaches, digestive disorders and various minor ailments. The herb is antispasmodic, urine-inducing, restorative, stimulant, and has agents that prevent vomiting, that relieve and remove gas from the digestive system, and give tone and strength to the stomach.
The infusion of 1 oz (28 g) of dried herb to 1 pt (568 ml) of boiling water is also said to be excellent for nausea and wind."

Sumac Dressing

SERVES 4
Ingredients
32 ounces chicken breasts
2 tablespoons olive oil
1 tablespoons balsamic vinegar
1 teaspoons ground sumac, berries
1 teaspoons basil
1/2 teaspoon oregano
1/4 teaspoon parsley
2 tablespoons lemon juice
Directions
1Slice chicken breasts. I prefer bite size pieces, but it doesn't matter.
2Mix all other ingredients. Add chicken and marinate for at least one hour.
3Cook over medium heat.

Method
Crush the sumac berries roughly in a mortar. Tip into a small bowl and pour on the warm water. Leave to infuse for 45 minutes, then strain into a measuring jug and reserve 100ml of the liquid.
In a bowl, whisk the sumac water with the oil, lemon juice, sugar and molasses. Season with salt and pepper and add the thyme and garlic. Leave to infuse for 20-30 minutes, then strain into a sealable jar.
The dressing will keep, refrigerated, for up to 3 weeks.
Makes 300 ml
